Grilled Bison Tenderloin (Unofficial Main Dish)
Game meat is extremely common in outdoorsy Montana, and bison, which requires minimal seasoning, is a clear favorite. Bison tenderloin is often grilled very simply and quickly, and served with potatoes as an evening meal. Many Montanans simply season the dish with store-bought seasoning mixes. Even using a custom mix of spices, this dish suits Montana's easygoing lifestyle. Bison is usually served with boiled or baked potatoes and string beans or another plain green vegetable.
Recipe Serves 2
- ½ tsp (2.5 ml) garlic powder
- ¼ tsp (1 ml) dried rosemary
- ¼ tsp (1 ml) mustard powder
- ¼ tsp (1 ml) black pepper
- 2 bison tenderloins, about ½ lb (250 g) each
- Juice from ½ lemon
- 1 Tbsp (15 ml) olive oil
- Preheat the grill to high.
- Whisk together the garlic powder, rosemary, mustard powder and black pepper in a small bowl.
- Rub the spice mixture all over the meat.
- Sprinkle the meat with lemon juice and oil.
- Place steaks on preheated grill and quickly sear each side.
- Reduce heat to medium and cook 8–10 minutes per side.
- Let rest 5–10 minutes before serving.
